Easy Steps

Rinse 80 g kodo millet thoroughly under running water and soak it for 15-20 minutes. Drain before cooking.

Heat 1 tsp oil in a pressure cooker or heavy-bottomed pan. Add 1/2 tsp cumin seeds and 1 tsp grated ginger. Sauté for about a minute until fragrant.

Add 40 g chopped onion, 40 g diced carrot, 40 g chopped French beans, and 30 g green peas. Cook for 3-4 minutes until the vegetables begin to soften.

Add the soaked kodo millet, 1/4 tsp turmeric, salt to taste, and 2 cups of water. Mix well.

Pressure cook for 2 whistles (or simmer covered for about 20-25 minutes) until the millet is tender. Garnish with fresh coriander and serve warm with a squeeze of lemon, if desired.
